Nona's Thanksgiving Stuffing.

Sweet Italian sausage, white bread, walnuts, and garlic — the stuffing Nona put inside the bird.

Ingredients

2½ lb bulk sweet Italian sausage
1 lb ground meat
2 loaves white bread
1½ cups finely chopped walnuts
1 whole clove garlic
Italian seasoning, to taste
Water, as needed

Using sausage rope? Slit and discard the casing before browning.

Directions

Cut the bread into cubes. If possible, do this the day before.
Finely chop the garlic.
In a large sauté pan, combine the ground meat and sausage. Add the garlic, sprinkle Italian seasoning over the mixture, and stir.
Sauté until the meat is thoroughly cooked.
Combine the sausage mixture and cubed bread. Add water a very small amount at a time, mixing just until moistened without soaking the bread.
Add the chopped walnuts and mix. The stuffing is ready for the bird.

Eighty-one years in

1945: A Basement in McKees Rocks.

Ernest and Stella Ricci brought the family spice blend from Sulmona, Italy and started mixing it by hand in the basement of their McKees Rocks home. Same recipe, three generations later, still made in McKees Rocks.

Before You Order.

When exactly does it arrive?

Your order ships on our regular shipping schedule. We don't hold it until Thanksgiving — keep the box frozen when it arrives. Order by November 18 and it'll be in your freezer before Thanksgiving. Ship days and transit windows are on the Shipping page. After November 18 we can't guarantee it'll be in your freezer before Thanksgiving.

What if I'm not home when it arrives?

We send every order frozen via two-day service in a sealed, insulated box with cold packs. Bring it inside when it arrives and refrigerate or freeze it promptly.

How long does it keep?

Frozen in the freezer until you're ready to cook it, thawed in the refrigerator — never on the counter. Specific windows are on the Shipping page.

Can I ship it to a different address?

Yes — enter it at checkout, useful if you're sending it straight to whoever's hosting.

Can I choose all hot or all sweet?

This bundle is a fixed pack — sweet, hot, meatballs, and a sausage roll. For a custom mix, call the shop at 412-331-9531.
