Mild, savory, balanced. We make it in small batches — roughly 200 lbs at a time — and the recipe is almost defiantly simple: salt, black pepper, and a touch of dextrose. When the ingredient list is that short, the pork has to be right — which is the whole point. Lean (22–25% fat, well under the federal limit), low sodium, all natural. We hand-stuff every link in McKees Rocks.
